Creamy Mushroom and Spinach Risotto

- •1.5 cups Arborio rice
- •4 cups Baby spinach
- •8 oz Mixed mushrooms
- •1 medium Yellow onion
- •6 cups Vegetable broth
- •1 cup grated Parmesan cheese
- •4 tbsp Butter
- •1 cup White wine
- •3 cloves Fresh garlic
Instructions
Heat vegetable broth in a saucepan and keep warm on low heat.
Sauté diced onion and minced garlic in 2 tbsp butter until translucent.
Add sliced mushrooms and cook until golden, about 5 minutes.
Stir in arborio rice and toast for 2 minutes.
Add white wine and stir until absorbed.
Add warm broth one ladle at a time, stirring constantly until absorbed before adding more.
Continue for 20-25 minutes until rice is creamy and tender.
Stir in spinach, remaining butter, and Parmesan cheese until spinach wilts.
