Ingredients
- •1.5 lbs Salmon fillets, skin-on, skin-on
- •1.5 cups Jasmine rice
- •1 cup Soy sauce, low sodium, low sodium
- •2 tbsp Brown sugar
- •1 tbsp Rice vinegar
- •1 tsp Fresh ginger, minced, minced
- •1 tsp Garlic powder
- •2 medium Carrots, julienned, julienned
- •1 large Cucumber, sliced, sliced
- •1 tsp Sesame oil
Instructions

Cook rice according to package directions.

Mix soy sauce, brown sugar, rice vinegar, ginger, and garlic powder for teriyaki sauce.

Heat sesame oil in large skillet over medium-high heat.

Season salmon with salt and pepper, cook skin-side down for 4-5 minutes.

Flip salmon, brush with teriyaki sauce, cook 3-4 minutes until internal temperature reaches 145°F.

Serve salmon over rice with carrots and cucumber. Drizzle with remaining sauce.
