Ingredients
- •1 lb Boneless, skinless chicken thighs, diced, skinless chicken thighs
- •2 cans (15 oz each) Cannellini beans, drained and rinsed, drained and rinsed
- •1 large Yellow onion, diced, diced
- •1 large Bell pepper, diced, diced
- •4 cloves Fresh garlic, minced, minced
- •3 cups Low-sodium chicken broth
- •1 can (4 oz) Diced green chiles
- •2 tbsp Olive oil
- •1 tsp Ground cumin
- •1 tsp Chili powder
- •1 tsp Dried oregano
- •1 to taste Salt and black pepper
Instructions

Heat olive oil in large Dutch oven over medium-high heat.

Add chicken, cook 5-6 minutes until browned on all sides.

Add onion and bell pepper, cook 4-5 minutes until softened.

Add garlic, cumin, chili powder, and oregano. Cook 1 minute until fragrant.

Add chicken broth, beans, and green chiles. Bring to boil.

Reduce heat to low, simmer 20 minutes until chicken is cooked through and flavors blend.

Season with salt and pepper. Serve with desired toppings.
